combine all ingredients except tonic with ice in 13oz moose + aurora glass. stir to chill. add more ice if needed, gently stir in tonic

LEMONGRASS & DRAGON FRUIT INFUSED AURORA GIN in a clean quart jar, combine 1 750ml bottle of aurora gin with 4oz frozen dragon fruit chunks + 6 pieces of lemongrass (the bottom 3" root removed, split & smashed)

FILL GINGER BEER (WE USED BUNDABURG)
stir together gin, moonshine, & syrup in a 13oz moose + aurora glass until syrup dissolves. add ice, lime juice, & bitters. stir to chill. add more ice if needed, gently stir in ginger beer to fill.

SPICED RASPBERRY SUGAR RIM MIX
1 cup organic sugar
4 T dried raspberry powder
2 tsp ground cinnamon
½ tsp ground ginger
1/8 tsp ground cloves
1/8 tsp ground allspice
1/2 tsp ground black pepper
CRANBERRY SIMPLE SYRUP
2 cups cranberries (rinsed & sorted)
2 cups water
1.5 cups sugar
Lemon
using a vegetable peeler, remove the zest of the lemon (if any white pith remains carefully remove with a sharp paring knife) bring water, cranberries, and juice of the lemon to a boil over medium high heat. once the cranberries start to pop, stir in sugar & lemon zest. reduce heat to low, cover and simmer 15-20 minutes. remove from heat, let cool & strain.

fill CLUB SODA
combine all ingredients with ice in 16oz Collins glass

700 GRAMS ORGANIC SUGAR (ABOUT 3.3 CUPS)
combine first four ingredients to saucepan over medium-high heat, bring to simmer,
reduce heat to a simmer, simmer 10 minutes.
using a microplane, zest limes & combine the zest with the sugar.
juice zested limes and set aside.
after 10 minute simmer, whisk in sugar + zest mixture until all sugar is dissolved.
stir in lime juice & let mixture cool. strain out solids with fine mesh or cheesecloth.
store refrigerated in airtight container for up to two weeks.

combine all ingredients in a cocktail shaker with ice, shake for about 10 seconds
to chill, dilute and aerate. double strain into rocks glass over craft ice cube.
