to a clean quart jar, add 1 cup frozen dragonfruit chunks, 1 english cucumber (peeled & sliced), the zest of 1 lemon. pour over 1 750ml bottle of aurora gin & infuse 12-18 hours in the refrigerator until taste & color are achieved.

LEMONGRASS INFUSED AURORA GIN

6 3" chunks of lemongrass, cleaned, split & smashed

infuse for 24 hours, fine mesh strain & enjoy.

TANGERINE SIMPLE SYRUP
2 TANGERINES (SUMO MANDARINS WILL WORK TOO!)
1 c ORGANIC SUGAR
1 C WATER
wash tangerines thoroughly. using a microplane, remove zest & mix into the sugar, set aside. add the juice of the tangerines & the water to a small saucepan & bring to a simmer.
stir in zest/sugar mixture until dissolved & remove from heat.
let cool, strain out solids using a fine mesh strainer. keep refrigerated & use up to two weeks.

PINK LEMONADE G+T
1.5 oz AURORA GIN INFUSED WITH DRAGON FRUIT & ORANGE
.33 oz LEMON SYRUP
.33 FRESH LEMON JUICE

.33 oz SPICED ORANGE VANILLA HONEY

SPICED ORANGE VANILLA HONEY
1 CUPS HONEY
1 CUPS WATER
4 grams STAR ANISE
1/4 vanilla bean, split
1 medium orange (zest only, removed with black peeler for oil filled strips & no pith)
combine water, star anise, vanilla bean & orange in saucepan, bring to simmer at 15-20
-as soon as it starts to simmer; cover, reduce heat to 5 & set timer for 5 minutes.
- as soon as time goes off stir in 2 cups honey until dissolved, cover & cool before straining out solids.

HERB GARDEN G+T
1.5 oz AURORA GIN
.33 oz FRESH SQUEEZED LIME JUICE
FILL TONIC WATER (WE USE FEVER-TREE MEDITERRANEAN)

rim a 12-13oz glass with sea salt.
combine gin, & lime juice in glass with ice,stir to chill & dillute.
add a bit more ice & gently stir in tonic to fill.
GARNISH IDEAS fresh cucumber slices

HERB GARDEN INFUSED AURORA GIN
1 750 ml bottle aurora gin
9 grams thai basil (sorted, washed, dried, big stems removed)
7 grams fresh dill (sorted, washed, dried, big stems removed)
50 grams english cucumber, washed & sliced (about 8-10 1/4” slices)
55 grams salted & drained tomatoes
1 large ripe red tomatoes, washed & sliced
1/4 tsp fine sea salt

combine tomato slices with salt, let sit ~1 hour (or overnight if needed)

strain out tomato water (use muddler or spoon to press liquid out, some can remain, don’t smoosh the ‘maters too much as we want them to remain mostly whole)
combine everything, infuse in fridge for 3 days, fine mesh strain.
